Panettone

My Dearest,

 

It was a cold, dark, damp, descent and my bike breaks jammed, late 2020 - consequently, and in addition to my indignant and defiant idiosyncrasies, I hit the road on a deep baking expedition. Reticent to ask for directions, I continue and fortuitously cross paths with an Italian baking master directing me to the euphoria of panettone. 

 

Cobblestone roads always test my cycling mettle - yet the sweet aroma from the bake, the anticipation of a bulbous growth, and the upside down rest, following the heated explosions, keep me on the edge of my baking seat. 

 

Finally, I reach the summit and stop - a Shangri-La of roses with cloud-like sweetness on the palate, so I “do,” voraciously, this sweet bread. I have not caught my breath, a moment of quiet reverie, forever seduced at the belvedere of panettone.
